Cube and dice ice melts slowly and displaces well in a glass, which is why it's the standard for bars and beverage service, and full dice holds up better in spirits while half dice packs tighter for soft drink. Crescent ice is the specialty of Hoshizaki ice machines, and because the pieces sit against each other rather than locking together, it pours more freely and is less likely to bridge in a bin. Flaked ice is a different job again: it's what you want for seafood display, salad bars and medical or laboratory use where the ice needs to mould around what it's packed against.
Production ratings are quoted at a fixed ambient, typically 32°C air and 21°C water. That's a laboratory figure, not a kitchen one. A machine sitting beside a cooking line, in an unventilated store room or in an uninsulated shed through an Australian summer will produce well under its badge rating. Spec on real worst-case output rather than the number on the brochure, and allow airflow clearance on every side the manufacturer specifies. Undersizing an ice machine is the most expensive mistake in the category, because the fix is a second machine.
Below roughly 100kg a day, a self-contained unit with the bin built in is the simpler option and takes up less floor space. Above that, modular systems make more sense: a separate ice head sits on a storage bin, so you can size production and storage independently and swap either one out later. Two site details worth settling before you order. Drainage is the first: if there's no floor waste below the machine, you need a built-in drain pump model rather than a gravity drain, and retrofitting one is more expensive than specifying it upfront. Water quality is the second. Hard or heavily chlorinated supply causes scale build-up that cuts production and shortens compressor life, so a filter on the feed line is cheap insurance and it's usually a warranty condition.
