Daily Rental: $23.11 Inc GSTRacks per hour is the number that matters, and the honest way to work it out is to count covers at your busiest service rather than across the day. An undercounter machine runs a two to three minute cycle and handles roughly 20 to 30 racks an hour, which suits cafes, small restaurants and back bars. Passthrough hood machines drop to a one to two minute cycle at 40 to 60 racks an hour and are the standard for most restaurants and pubs. Above that you're into rack conveyor and flight machines, which run continuously and are sized for hotels, clubs, function venues and institutional kitchens.
Sanitising is the part that gets people caught out. Australian food safety requires either a thermal final rinse, generally 82°C or above, or chemical sanitising for machines that can't reach it. Thermal machines need enough electrical capacity to heat that rinse water on demand, so anything beyond undercounter size usually wants three phase. Check what's at the board before you spec, because a supply upgrade can cost more than the machine.
Hard water scales up boilers and wash arms, cuts wash performance and shortens element life, and in much of regional Australia it's a real problem rather than a theoretical one. A softener or filtration on the feed line is cheap next to a boiler replacement and it's usually a warranty condition. Detergent and rinse aid dosing needs setting correctly too, since under-dosing leaves film on glassware and over-dosing just wastes chemical.
Glasswashers are a separate machine for a reason. They run lower temperatures and gentler cycles to stop glass clouding and etching, and if you're a pub or bar doing volume behind the bar you want a dedicated unit rather than putting glassware through the dish machine. Utensil and pot washers work the opposite way, with longer cycles and higher pressure for baked-on pans, and cutlery polishers finish and dry cutlery so it doesn't get hand-polished by staff.
