Fan-forced (ventilated) cabinets blow cold air around the cabinet, so temperature stays even top to bottom and recovers quickly when the doors are opened a lot. The downside is that moving air dries out anything uncovered, so sponges go stale, cut edges crust over and icing loses its shine. Static cabinets cool more gently and hold more humidity, which suits unwrapped cakes and pastries, but there can be a few degrees difference between the top and bottom shelves. If most of what you sell is wrapped or boxed, fan-forced is fine. If it's open cakes and slices on a platter, look at static or a cabinet designed specifically for cakes.
Under the Food Standards Code, potentially hazardous food has to be kept at 5°C or below. That covers sandwiches, salads, cream and custard cakes, cheesecake and most filled pastries. A cabinet that sits at 7°C might be fine for drinks and dry cakes, but not for a tiramisu. Check the rated holding temperature on the spec sheet, and put a probe thermometer in the warmest spot, usually the top shelf near the front, rather than trusting the display on the controller.
Display fridges are tested to perform at a set room temperature and humidity. A cabinet rated for a 25°C room will struggle in a shopfront with afternoon sun and the coffee machine running beside it, and you'll see it in warm product and a compressor that never switches off. If your shop gets hot in summer, pick a unit rated for higher ambient temperatures and keep it out of direct sun and away from doorways.
Service cabinets have sliding doors at the back, so staff serve from behind the counter and customers only get to look. Self-serve cabinets have front doors customers open themselves, which suits grab and go but means more doors opening and more temperature loss. Open front displays with an air curtain move the most stock, but they use more power, get knocked around by air conditioning and draughts, and should only hold wrapped or packaged food.
Countertop units sit on the bench next to the register and work well for a small range of cakes and slices where bench space is tight. Floor standing cabinets form part of the counter itself and hold far more, usually across three or four tiers. Measure the width you've got to fill, and remember a floor standing unit needs to line up with the rest of your counter height and joinery.
Most cabinets here are self-contained, meaning the compressor sits in the base and dumps its heat straight into your shop. In a small cafe that's noticeable, and your air conditioning will be working harder to keep up. The unit also needs room to breathe, so don't box it tightly into joinery without the vent openings shown on the spec sheet. A blocked condenser is the most common reason a display fridge stops holding temperature.
Clean the condenser coil every few months, or monthly in a bakery where flour gets into everything. Keep the condensate drain clear, since a blocked drain means water pooling under the product trays. Wipe the glass inside and out daily, and check the door seals on service and self-serve cabinets, because a torn seal lets warm air in all day.
