A planetary mixer takes different attachments, so one machine handles doughs, batters, creams and fillings, which suits cafes, patisseries and mixed production. A spiral mixer is built for one job: bread dough. The bowl rotates while a fixed spiral hook works the dough, which develops gluten faster and keeps the dough cooler, and cool dough is what gives you consistent proving. If you're producing bread daily in volume, a spiral is the right tool even though it does less. Bowl capacity is quoted in litres, so work from your largest single batch rather than daily output.
A prover holds warm humid air to bring dough up before baking. A retarder prover does both jobs on a timer: it holds dough cold overnight to slow fermentation, then switches to proving in the early hours so the dough is ready when your baker walks in. That's the difference between starting at 2am and starting at 5am, and for most bakeries it's the single most valuable piece of equipment in the room. Combined prover and holding cabinets suit cafes and bake-off sites where the same cabinet needs to prove in the morning and hold finished product later.
Bakery equipment is built around the 600 x 400mm tray, while most foodservice equipment runs 1/1 gastronorm. Provers, retarders and racks need to take the same tray as your oven, so settle this before you buy anything. If you're running a convection oven in bakery configuration, the prover and racking need to match it, and mixing the two standards means duplicate trays and racks you didn't budget for.
Heated pie displays hold product at safe serving temperature without drying it out, and the heat and hold models add a cook cycle so you can bake off and hold in the same cabinet. Ambient display cabinets suit bread and pastry where humidity is the enemy. Sizing is by pie capacity or shelf area, so count your busiest lunch rather than your average.
