Daily Rental: $1.09 Inc GSTHeat lamps hold plated or carved food at temperature for short periods, typically on the pass while the rest of an order comes up, or over a carving station during service. They work by radiant heat from above, which keeps the surface hot without cooking the product further. What they don't do is hold food for extended periods, because dry radiant heat pulls moisture out and product will dry and crust within twenty minutes or so. If you need to hold for an hour or a service, that's a bain marie job, not a heat lamp job.
Most heat lamps are designed to sit somewhere between 400mm and 500mm above the food surface, and that's the spec people get wrong most often. Too high and the heat spreads out and does nothing. Too low and you'll cook the top of the product and risk the element being in the way of staff working. Check the manufacturer's stated height before you decide where the lamp is going, because a gantry built at the wrong height means either replacing it or living with a lamp that doesn't work properly.
Clear quartz bulbs give bright white light that shows food honestly, which is what you want at the pass where chefs are checking plates. Ruby or red-coated bulbs give warmer light that makes meat look richer, which is why they turn up over carveries and bain marie lines. Ceramic elements produce heat with almost no visible light at all, so they suit back of house holding where appearance isn't the point. It's a presentation decision as much as a technical one.
Single lamps cover a defined spot, so they suit a carving board, a single plating station or a small pass. Strip heaters run the full length of a gantry and give even coverage across a whole servery or bain marie line, which is what you want above multi-bay food display. Strip heaters are sold by length, so measure the gantry or counter run rather than guessing, and allow for the fact that coverage drops off at the ends.
Gantry and bench mounted units are permanent and get wired in, which is the right answer for a pass or servery that isn't moving. Pendant lamps hang from the ceiling and suit carveries and buffet lines where you want the counter clear underneath. Portable clamp-on and free-standing lamps suit function catering and venues that reconfigure regularly. Anything hardwired needs a licensed electrician, and it's worth confirming the circuit has capacity before you add a run of strip heaters to an existing servery.
